How to make pasta?
Before you make your own pasta, you need to take care of the purchase of bread flour, because it contains a lot of gluten. It gives the product the necessary texture. If you take the usual flour, then from it the pasta will turn out soft, and when cooking dishes will stick and boil soft.
Homemade pasta requires the following products:
- bread flour - 350 g;
- semolina - 350 g;
- sea salt - 1 tsp;
- chicken eggs - 7 pcs .;
- olive or vegetable oil - 2 tbsp. l
How to make pasta: cooking process
Sift manna and bread flour through a fine sieve, mix them and create a hill on the table. Add salt to it and make a well. Pour olive oil into it and beat the eggs. Using a fork, beat the yolks thoroughly, and then start kneading the dough. It should turn out elastic and not too rigid. At the same time it should be springy and be uniform.
Wrap the finished dough in film, put in the fridge and incubate for 30 minutes.Then roll it into a thin oval, the width of which should be like that of a machine designed for making pasta. Adjust it to the largest thickness. Sprinkle some flour on the surface of the machine to prevent the dough from sticking, then roll it through the rollers 2-3 times. Move the machine to another level and again skip the dough. Do this several times. Then set the machine to the lower level and perform the same procedure with the test.
Decide what kind of pasta you will make. If you need regular noodles, then skip the rolled dough through narrow knives. Then dry it for 5 minutes, and then roll up the nests. If you want to make noodles for fettucine, then use thick knives for cutting. Then you can use ready-made pasta for cooking. Bon Appetit!
