How to make potato biscuits

    • Dough:
  • 250 g of potatoes;
  • half a lemon;
  • 4 eggs;
  • 60 g ground almonds;
  • 1 tsp potato starch.
  • Filling:
  • 1 pack of vanilla pudding;
  • 300 ml of milk;
  • 200 g of cream;
  • 40 g sugar;
  • 200 g raspberries.
For the preparation of biscuits, it is best to take potatoes of mealy, boiled down varieties. Clean it, rinse well, fill with water. Large tubers should be cut into 2 or even 4 pieces. Put the pan on the fire, boil for 20 minutes, after which you will need to drain the water and leave the pan with the lid open to dry the potatoes. When it cools down a little, wipe it through a sieve.
Preheat oven to 200 ° C. If it has the function of blowing hot air, 180 ° C will be quite enough.
From the total number of potatoes measure exactly 150 grams.
When buying a lemon, try to choose one whose peel is not treated with chemicals. Wash it well with hot water, with a fine grater, remove the zest, squeeze the juice out of the pulp.
Separate the whites from the yolks.First put it aside for the time being, and pound the second with a spoon or whisk with a mixer with sugar until whitening. Add juice and lemon zest. Continue to beat, adding potatoes in small portions until you have added all 150 grams.
In the finished dough, mix in potato starch and almonds. Beat the squirrels to a state of strong foam, mix them into the dough with gentle movements of the spoon from the bottom up.
Line the bottom of a detachable cake mold with parchment or brush it well with some neutral oil. Put the dough in the form, bake it in the oven for 40 minutes. Cool the finished cake, remove it on a cutting board. Using a sharp knife or nylon thread, cut horizontally into two pieces.
Gently wash the fresh raspberries, put on a kitchen towel, let dry.
